Floresmiro Pillimue, better known as Floro, is a 41 year old coffee producer who has lived in the San Vicente village of Inza, Cauca since he was a child. Here, he rents land at Finca El Limon from a friend and cultivates Bourbon coffee that he calls “Mountain Bourbon,” named for the upper ridge of his community where the seeds for his crop were sourced. The farm he acquired the seeds from had grown this coffee on their property for generations, earning recognition for the high cup quality produced with those trees.

Along with operating his own plot at Finca El Limon, Floro supplements his income working as a day laborer to support his family and his crop. Through his partnership with Pergamino, he plans to save the premiums he receives to purchase his own farm someday.

This lot of Bourbon coffee underwent Washed processing. Pulped coffee was fermented without water for 48 hours prior to being washed. The washed coffee was then dried on a drying patio.

Cauca

The Colombian department of Cauca lies in the southwestern part of the country, with the Pacific Ocean to the west, Valle del Cauca Department to the north, Tolima Department to the northeast, Huila Department to the east, and Nariño, Putumayo, and Caqueta Departments to the south. Many rivers traverse Cauca and the Central Range of the Andes Mountains runs through the department. Popayan is the capital city and Cauca’s population is distributed throughout the rural highlands and valleys.
