Adelina Fallas represents the fourth generation of her family dedicated to coffee production. At the age of 18, she began managing her mother’s farm, and for over a decade she has been cultivating, processing, and growing her role within the coffee value chain. Eight years ago, she started processing coffee in various micromills, and in 2025, she expanded her scope by purchasing from other local producers, offering them better prices than those provided by cooperatives or large companies in the region. 

Her own farm is located in La Legua de Aserrí, a small town near the renowned Los Santos coffee region. While coffee production in this area has declined due to generational shifts, Adelina is committed to preserving her family’s legacy while creating new opportunities for others in her community. The terrain in La Legua is mountainous and rugged, with a cool and temperate climate that supports the growth of high-quality coffee. Her farm is Rainforest Alliance certified, and her broader project focuses on responsible sourcing and fair-trade practices with the producers she partners with in Amé Café.  

This lot, El Cedral, underwent washed processing.  After harvesting, the coffee was depulped and washed using clean water. The drying took place in a solar greenhouse on raised beds for 7 days, allowing for even and consistent drying conditions. 

 

Region

Dota

Dota is a canton located in the province of San José, in Costa Rica’s Central Valley, and is part of the renowned “Zona de Los Santos,” which also includes the neighboring cantons of Tarrazú and León Cortés. This region is known for its high elevations, cool climate, and strong coffee-growing tradition. Many farms in Dota are situated above 1,800 meters above sea level, with some reaching beyond 2,000 meters—conditions that support the production of dense, high-quality coffee. 

The climate in Dota features two distinct seasons: a rainy season from May to November, followed by a dry season from December to April. These clearly defined periods allow for uniform flowering and ripening of coffee cherries. Average annual rainfall is around 2,400 millimeters, and temperatures remain mild year-round, averaging 19°C. 

The mountainous landscape and volcanic soils of Dota are well suited for coffee cultivation. Smallholder farmers often manage mixed-use farms that include coffee alongside crops like citrus, bananas, and avocados. Many producers in the region maintain patches of native forest and use shade trees to preserve biodiversity and protect natural water sources. Coffee production in Dota is strongly rooted in family tradition and community values, with a growing focus on quality, traceability, and environmental stewardship.
